Our Italian heritage has meant we have grown up with a strong sense of family and with that comes a keen appreciation for food. Stretching as far back as we remember, every milestone event was celebrated with copious amounts of home-cooked dishes stemming from the influence of our grandparents, who to this today in their nineties, continue to cook for all of us on a weekly basis.
Aside from the obvious staple being pasta, there is one dish that has been bounced around by our mothers and grandmothers and has firmly cemented itself as a fixture at the dessert table. That dish is our Mama’s tiramisu. A crowd pleaser if ever there was one. Creamy in texture with strong coffee tones, this is the perfect accompaniment to an espresso and never fails to disappoint.
We are so excited to be partnering with Western Union on this campaign because on Mother’s Day, it’s especially important to take a moment out of our busy schedules to honour the mum’s in our lives. And the rich heritage that binds us through the passing down of treasured family recipes. Hence, we would like to share this recipe for our mama’s tiramisu and hope that it brings as much joy to your families as it has to ours.
We believe that one of the simplest ways that we can appreciate and express cultural diversity is by sharing a meal – and meals are much more than just food on a plate, they are ways we find common ground. The comfort that comes with a hot, delicious meal lovingly prepared by mum is universal.

Mama’s Tiramisu
Serves 8-10
Ingredients
4 egg yolks
4 egg whites
3/4 cup caster sugar
2 packets large savoiardi biscuits
500g mascarpone cheese
1/2 cup thickened cream
Vittoria Coffee (percolated is preferable)
Splash of Kahlua/Tia Maria (optional)
Chocolate cocoa powder
Method
Step 1: Separate the egg whites from egg yolk. Beat egg whites with electric mixer until soft, peaks form. Place in fridge until ready to use.
Step 2: In a separate bowl add sugar and egg yolk and beat until creamy and pale in colour.
Step 3: At this point, prepare one pot of coffee whether that be percolated or plunged. Pour into a shallow bowl and allow to cool. A splash of Kahlua or tia maria can be added at this point if desired.
Step 4: Stir in the mascarpone and cream with the sugar and egg yolk. This can be done by mixing in with a wooden spoon or by using an electric mixer on a low speed setting.
Step 5: Fold in the egg whites to the mixture until the overall consistency is smooth and thick.
Step 6: Using a square or rectangular dish, place one layer of savoirardi biscuits at the base. To prepare the biscuits, quickly dip each one in the coffee and place at the base of the tray. You may not use all savoiardi biscuits, this will depend on the size of the tray.
Step 7: Spoon in the mascarpone mixture and smooth to create a layer covering the biscuits. Repeat this step with another layer of biscuits and cream.
Step 8: Cover and place in the fridge to chill and set for a minimum of 4 hours, but overnight is preferable.
Step 9: Dust with a generous amount of cocoa powder just prior to cutting and serving
