[invite] It’s our favourite time of year, there is a chill in the air with the heady delightful aroma of truffles! Winter is here and in full swing!
We first visited Mode Kitchen back in 2018, you can read about our previous experience here. Fast forward to 2022 and Mode Kitchen will be celebrating five years with a special dinner across five days (19-23 July).
With chef Francesco Mannelli at the helm, Mode Kitchen offers a Truffle Degustation for $140pp for five courses.
The first course comprises of three shared dishes.
Scallops crudo, ponzu, seaweed & finger lime. Delicate paper thin shavings of scallop, accented by citrus bursts of finger lime.
Polenta fritta, porcini, lardo & truffle. Trufle makes an appearance in a big way, crispy polenta serves as a vessel for porcini mushrooms and a thin slice of unctuous and silky lardo.
Blackmore tartare, caviar & puri bread. Sublime in texture, with prominent marbling on full display, best eaten with one swift bite.
Moving on to the more substantial offerings. The Risotto, Parmigiano & Truffle was creamy and thick with generous shavings of truffle.
My favourite dish of the degustation was the Chicken ballottine, porcini mushrooms, celeriac and truffle. A humble chicken dish you ask? Certainly not! Stuffed with porcini mushrooms, the chicken was beautifully soft, lavishly topped with truffles and tied together with that celeriac mash (I could have eaten an entire bowl of that mash).
To cleanse the palate, Mandarin givree, fennel pollen & olive oil. A fabulous bitter segue in preparation for dessert!
And to finish, Black Truffle Tiramisu. Ness happens to make a prized tiramisu within our family and this was on par with hers. Wonderfully boozy and moreish.
We left well sated and impressed with the truffle degustation. Truffles were truly the flavour of the day and they were in abundance!
